Turkey gravy

Ingredients:

Turkey offal (heart, liver, and kidneys) and neck.
4 cups of chicken stock.
1 onion.
4 sprigs of fresh thyme.
1 bay leaf.
3 cups of broth from the roasting pan.
1/2 cup of turkey fat from the roasting pan.
10 tablespoons of all-purpose flour.
Black pepper and salt.




Instruments:

Fat separator or turkey baster.
Whisk.
